Craft Cocktail and Burger Pairings: How Our Bar Team Does It

Beer with a burger is easy. A cocktail with a burger, done right, is better. Here's how our bar team thinks about pairing a drink with a crispy-edged smash.

Beer with a burger is the default, and there's nothing wrong with it. But craft cocktails and burgers, matched on purpose, is a better meal than most people realize. Our bar team on King Street has been running this experiment for years, and there's a real logic to it.

A smash burger is rich. Fresh beef pressed onto a screaming-hot flat top, crispy lacy edges, melted American cheese, house sauce, a buttered brioche bun. That's a lot of fat and salt in one hand, and fat and salt want something sharp on the other side.

Here's how we build the pairing at 428 King Street, and how you can order like you've done it before.

How Do You Pair a Cocktail With a Burger?

Three levers. Acid, bitterness, and effervescence. Every one of them resets your palate between bites, which is exactly what a rich burger needs.

Acid is the big one. Citrus, vinegar, dry vermouth, anything bright cuts through beef fat and makes the next bite taste like the first. If a drink makes your mouth water, it's doing its job.

Bitterness works differently. Amaro, campari-style bitters, and even a heavily bittered old fashioned scrub the fat off your palate rather than washing it away. It's a slower, deeper reset, and it suits a heavier burger.

Bubbles just help. Carbonation lifts everything and keeps a rich meal from feeling heavy by the last quarter of the burger.

Rich, salty, crispy. Now give it something bright to argue with.

    What About Spicy Burgers?

Heat needs a little sweetness and a lot of cold. Something with a touch of sugar and plenty of ice will tame a spicy patty better than another shot of chili on top. Avoid high-proof spirits neat next to real heat, since alcohol amplifies capsaicin and you'll be chasing your own mouth for ten minutes.

    What About a Classic Cheeseburger?

A straight cheeseburger with house sauce is the easiest pairing on the board. Anything citrus-forward and stirred-clean works. So does a properly made whiskey drink with real bitterness in it. The burger is doing plenty of talking, so the drink can stay simple.

Craft Cocktails and Burgers on King Street

There's a reason we put a real bar program next to a burger kitchen instead of treating drinks as an afterthought. Downtown Charleston has serious cocktail bars and serious restaurants, and not many places do both in one room while a live show plays.

On show nights the pairing matters even more, because you're in a seat for a couple of hours. A well-built drink with food in front of you keeps a long night comfortable. Dueling pianos run Wednesday through Saturday, and our guide to what dueling pianos actually are explains how those nights go.

    Ordering Rules That Actually Work

    • Order the drink and the food together so they arrive close. A cocktail that sits for fifteen minutes waiting on a burger is a worse cocktail.
    • Ask for something bright if you're going double. More patty means more fat, and more fat wants more acid.
    • Save the heaviest, sweetest drink for after the food, not during it.
    • Tell the bartender what you like instead of what you want. Give them a lane and let them drive.

That last one is the real trick. Our team would rather build you something dialed in than hand over a drink you ordered because you couldn't think of anything else.

Building a Night Around the Bar

A great pairing turns dinner into a night out. Get downtown early, take a seat at the bar, order a burger and something cold, and see where the evening goes. We put together a rundown of the best things to do on King Street at night for the rest of the plan.

And if you want the technical version of what's happening on our flat top before that burger reaches your drink, read our breakdown of what a smash burger is and why the crispy edge matters.

    Frequently Asked Questions

What cocktail goes best with a smash burger?

Something bright and acidic. Citrus-forward drinks cut through beef fat and reset your palate between bites, which makes each bite of the crispy edge taste sharper.

Should I drink beer or a cocktail with a burger?

Both work. Beer is easy and refreshing, while a well-built cocktail with acid or bitterness does more to balance a rich, salty burger.

What should I drink with a spicy burger?

Go cold with a touch of sweetness. Skip high-proof spirits served neat, since alcohol makes chili heat feel stronger.

Does John King Grill have a full bar?

Yes. We're a full bar and grill at 428 King Street in downtown Charleston, with craft cocktails, beer, and dueling piano shows Wednesday through Saturday.
