Finding the best late-night food in Charleston is about knowing which kitchens are still actually cooking, not just reheating.

King Street is the right place to be looking. Downtown Charleston stays awake here, and we're right in the middle of it at 428 King Street, on the corner of John and King, with a kitchen that runs late and a flat top that stays hot.

The bar is different at midnight, but it shouldn't be on the floor. Late-night food should be hot, made to order, and built to eat with your hands. That's it. Anything sitting under a lamp doesn't count.

Burgers are the classic answer for a reason. A smash burger cooks in a few minutes, which means the kitchen can turn one out fast even when the bar is slammed. Fresh beef hits the flat top, the edges go crispy and lacy, cheese melts over the top, and you're eating within minutes of ordering.
